Who knew that kale could taste like comfort food? Kale is transformed with the help of fish sauce and parmesan, two truly magical ingredients.

  • 2 cups of Kale, shredded and cleaned
  • 1 sweet onion, minced
  • 2 teaspoons of fish sauce
  • 4 tablespoons of shredded parmesan
  • ¼ cup of cheesy croutons
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon ancho chili powder
  • 1 tablespoon of olive oil
  1. Shred and clean the kale into thin strips. Chop the onion.
  2. In a large saute pan, heat the olive oil on a medium flame. Add the onion and the fish sauce. Sautee for 5-7 minutes until soft and glistening. Add the salt, pepper, and ancho chili powder.
  3. Add the kale and toss to coat with the onion mixture. Cook for an additional 10 minutes, until it begins to yield.
  4. Remove from heat and put in serving bowl. Add the parmesan and bread crumbs. Toss vigorously. Serve warm.
