Maple Glazed Salmon with Balsamic Macerated Strawberries
  • 2 Salmon Fillets, ⅓ to ½ pound each
  • 1 cup of fresh strawberries, cut into quarters
  • ¼ cup of good quality balsamic vinegar
  • 2 TBSPs of maple syrup
  • 1 lemon
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Wash and cut the strawberries, place in a bowl and top with balsamic. Stir well to coat.
  3. Rinse the salmon fillets and pat dry. Place in a Pyrex or other oven safe dish.
  4. Brush each fillet with maple syrup.
  5. Bake in oven for 10 minutes. Remove salmon. Brush maple syrup copiously on top. Turn the oven to broiler.
  6. Broil the salmon filets for 5 minutes, until a nice crust develops.
  7. Plate and serve with strawberries on top and with squeezed lemon juice.
