Now that fall is truly here, I thought it might be a good time to share a few of my favorite crockpot dishes. I hope a few of these make your weekday meals or Sunday dinners a little easier and a little richer. I’m always in the market for a little inspiration to get out of cooking ruts.
How could a woman with a marketing background come up with such a horrible name for a recipe? I tried, really I did, but these chicken thighs are beyond definition. The ecclectic mix of ingredients works like magic and creates a cozy dish with warm flavors. Don’t judge it by name only. The thighs fall apart and are delicious on rice or with a side of colorful vegetables.
This is another exotic crockpot dish that falls squarely in the comfort food category. I love combining the sweetness of raisins and sweet potatoes with chicken. This is delicious on top of couscous or on its own with warm bread to sop up the golden sauce.
This is the spiciest of the three dishes here – a brisket with a gentle heat. One brisket can easily make two or three dinners for us, first as the dish, then again as soft tacos, and finally as Saturday sandwiches with a little cole slaw.
